    Drain and rinse chickpeas – add to a mixing bowl and mash with the back of a fork

    To the mixing bowl add mayo, lemon juice, dijon mustard, salt, pepper and parsley – mix it all together

    Add the chickpea mixture to bread and create a sandwich
