Instructions

  1. 1.

    To a large frying pan, add olive oil, red onion and garlic – cook for ~4 minutes

  2. 2.

    Add the chickpeas, harissa paste, tomato purée, maple syrup, smoked paprika, lime zest and juice – mix until covered and cook for ~4 minutes

  3. 3.

    Wash the sweet potato, pierce all over and place in the microwave for ~5 minutes

  4. 4.

    Plate up the sweet potato with chickpea mix and top with tahini, yogurt, coriander and dill
