    Pre-heat the oven to 200°C (390°F)

    To a baking tray, add chopped carrots, parsnips, sliced onion and chickpeas

  3. 3

    Drizzle over olive oil, smoked paprika and cumin – mix until covered, place in the oven for 25 minutes

    To a mixing bowl add harissa paste and maple syrup – mix until smooth

  5. 5

    Add sliced halloumi to a frying pan – cover with the harissa sauce, cook until crispy on both sides

    To a mixing bowl add tahini and yogurt – mix until smooth

    To a serving bowl pour boiling water over couscous (enough to slightly cover)

    Once ready, add roasted veggies, yogurt dressing and halloumi to the couscous – sprinkle over the chopped parsley and squeeze over lemon juice
