Harissa halloumi with couscous & yogurt dressing

Instructions
- 1.
Pre-heat the oven to 200°C (390°F)
- 2.
To a
baking tray, add chopped carrots, parsnips, sliced onion and chickpeas
- 3.
Drizzle over olive oil, smoked paprika and cumin – mix until covered, place in the oven for 25 minutes
- 4.
To a
mixing bowl add harissa paste and
maple syrup – mix until smooth
- 5.
Add sliced halloumi to a
frying pan – cover with the harissa sauce, cook until crispy on both sides
- 6.
To a
mixing bowl add
tahini and yogurt – mix until smooth
- 7.
To a
serving bowl pour boiling water over couscous (enough to slightly cover)
- 8.
Once ready, add roasted veggies, yogurt dressing and halloumi to the couscous – sprinkle over the chopped parsley and squeeze over lemon juice
