Instructions

    Cook macaroni according to instructions

  2. 2.

    Heat a wok on high heat, once hot add the olive oil along with mushroom and onion – cook for ~3 mins

  3. 3.

    To the wok add the kale – cook for ~3 mins

  4. 4.

    To a blender add tofu, nutritional yeast, salt, half the lemon juice and a splash of water – blend until smooth

  5. 5.

    Once the macaroni is cooked, drain and add to the wok along with the sauce from the blender

  6. 6.

    Serve with the remaining lemon juice and chopped walnuts
