    Heat a large frying pan on medium heat, once hot add the olive oil along with leek and sauté for ~5 mins

    Add the carrot ribbons to the frying pan and cook for ~2 mins

    Add the chopped sundried tomatoes and chopped jalapeño to the frying pan and let it sauté for ~3 mins

    Serve on toasted bread
