Cook beetroot in boiling water – once soft, drain and let it cool

Once cool, peel the skin and grate into a mixing bowl

Add in chopped onion, lemon juice, maple syrup, salt, pepper and olive oil

Mix it all together and place in the fridge for at least 30 mins before serving
