Instructions
- 1.Wash and chop potatoes into small cubes, add to  saucepan with salted water – cook for 10-15 mins saucepan with salted water – cook for 10-15 mins
- 2.Finely chop the shallots, gherkins and chives 
- 3.Once the potatoes are cooked, drain and let them cool for ~5 mins 
- 4.Into a mixing bowl add the potatoes, shallots, gherkins, chives, mayo, olive oil, white wine vinegar and pepper – mix well 
- 5.Serve warm or cold – great as a side dish
